YUE has struck gold at the 2013 Best of the Best Culinary Awards
[Hong Kong – 12 October 2013] An original and delightful seafood delicacy has struck gold for YUE, Hong Kong Gold Coast Hotel, at the “2013 Best of the Best Culinary Awards – Seafood Category” organised by the Hong Kong Tourism Board. This is the second occasion in which YUE has been crowned with this prestigious honour – Gold Award in the “2011 Best of the Best Culinary Awards – Dim Sum Category”, which exemplifies the culinary excellence of the chefs’ team.
The gold award-winning entry, Spotted Garoupa Duet, consists of steamed Spotted Garoupa rolls on mashed bean curd with shrimp paste, and deep-fried Spotted Garoupa rolls stuffed with asparagus in freshly made mango sauce.
New elements have been added to the traditional dish to create a gastronomic and sensual experience for patrons. The chefs prepare the central ingredients using two different methods; by steaming and deep frying the Spotted Garoupa to bring out the freshness and crispiness of the fish simultaneously.
The chef carefully selects the Spotted Garoupa to ensure high quality of the main ingredients. Sliced Spotted Garoupa is served on top of mashed bean curd with shrimp paste, mixed with preserved egg yolk and Jinhua ham to enrich the traditional flavours. The remainder of the sliced fillet is rolled with asparagus and deep-fried, making it crispy on the outside while tender on the inside. Dipped in fresh mango paste, the colourful and innovative dish delivers a refreshing taste both inside and out.
