Job Responsibilities:
  • Working under the guidance of the Director of Food and Beverage, management of all functions of food production, kitchen operations.
  • Maximising of the Food and Beverage departmental profit by executing cost and manpower control of facilities and wastage management.
  • Maintaining control of the quality of food production in accordance with the hotel group’s policies and procedures.
  • Maintaining awareness of trends, systems, practices and equipment in food and beverage through trade literature, hotel shows and site visits.
  • Creating new dishes, design seasonal and promotional menus of leading market dining trend.
  • Implementing a high standard of hygiene and safety system in the kitchens.
  • Establishing and maintaining good employee and inter-departmental working relationships.
Requirements:
  • A minimum of 10 years of experience in Chinese restaurant kitchen management with 5 years in similar position.
  • Proven expertise in menu planning, inventory and labor cost control.
  • All-round exposure to Chinese and Asian style food operations.
  • The ability to create cuisine to a high standard in an innovative manner.
  • Excellent leadership, interpersonal and communication skills, and the ability interact with guests, management and colleagues in a professional manner.
  • Good knowledge of food safety management system.
  • Excellent communication and interpersonal skills in both English and Chinese.
